A classic Tiramisu - the perfect dinner party dessert! Can be made in advance and is the perfect ending to a fabulous dinner.
SERVES 2
INGREDIENTS
500ml thickened cream
500g mascarpone
½ cup caster sugar
1 tsp vanilla extract
2 cups strong espresso coffee
16 ladyfinger biscuits
2 tbsp dark cocoa powder
- Beat together the marscapone, caster sugar and vanilla until just combined (don’t overwhip this!
- Beat the thickened cream until you reach soft peaks, about 4 minutes.
- Gently fold the whipped cream into the mascarpone mixture, ½ cup at a time.
- Add the coffee to a small baking tray or container.
- Working quickly, dip ladyfingers into the espresso, then break them in half and press between the base of 4 small ramekins.
- Top with some of the whipped mascarpone mixture. Then repeat this process with the remaining biscuits and mascarpone mixture until you fill the cups.
- Place in the fridge for at least 2 hours to set. When ready to eat, sift cocoa powder on top to serve.
