Stop chucking your broccoli stalks! Make this Broccoli Stalk Slaw instead. It's crunchy, creamy and salt - all the good things you need. Perfect paired with a chicken schnitzel.
SERVES 4 AS A SIDE
INGREDIENTS
3 tbsp aioli
1 lemon, juiced
1/2 tsp sea salt
1/2 tsp black pepper
3 broccoli stalks, finely sliced
1/2 small fennel, finely sliced
1/2 cup roasted, salted peanuts, roughly chopped
1 cup butter beans
Handful of celery leaves (tender light green leaves are best)
1 tsp extra-virgin olive oil
METHOD
- Mix together the aioli, lemon juice, salt and pepper.
- Add in the remaining ingredients (reserving some for garnishing) and toss to combine.
- Serve garnished with a little extra pepper, celery leaves and peanuts.
