Broccoli Stalk Slaw

Stop chucking your broccoli stalks! Make this Broccoli Stalk Slaw instead. It's crunchy, creamy and salt - all the good things you need. Perfect paired with a chicken schnitzel. 

SERVES 4 AS A SIDE

INGREDIENTS 

3 tbsp aioli
1 lemon, juiced
1/2 tsp sea salt
1/2 tsp black pepper
3 broccoli stalks, finely sliced
1/2 small fennel, finely sliced
1/2 cup roasted, salted peanuts, roughly chopped
1 cup butter beans
Handful of celery leaves (tender light green leaves are best)
1 tsp extra-virgin olive oil

METHOD 
  1. Mix together the aioli, lemon juice, salt and pepper.
  2. Add in the remaining ingredients (reserving some for garnishing) and toss to combine.
  3. Serve garnished with a little extra pepper, celery leaves and peanuts.
