An iconic combination for a reason. Whole vanilla bean pods not required (as we realised they were $10 each when we shot this recipe!). Enjoy with friends, family, housemates, or just scoff it all down to yourself.

Serves 4
Ingredients
500g strawberries, sliced
2 tbsp caster sugar
1 vanilla bean pod, seeds scrapped and stalk chopped (or 2 tsp vanilla extract)
Mascarpone Cream
1 cup thickened cream
1/4 cup caster sugar
1/4 cup mascarpone
1 tsp vanilla extract
Method
1. Preheat oven to 180C.
2. Add strawberries, caster sugar and vanilla bean seeds and pod into a baking dish. Toss to combine.
4. Bake for 15 minutes until strawberries are well caramelised.
5. Add cream and sugar to the bowl of a stand mixer (or use hand beaters). Beat on medium speed until soft peaks form (1-2 minutes).
6. Add the mascarpone and vanilla and beat until just combined.
7. Divide the Mascarpone Cream and roasted strawberries between bowls, to serve.
