SERVES: 4 as a side 


600g heirloom tomatoes, chopped into 2-4cm pieces
2 peaches, chopped into 2cm pieces
1/2 red onion, finely sliced
2 tbsp oregano leaves
1 tablespoon red wine vinegar
1/2 teaspoon sea salt 
1/4 teaspoon freshly cracked pepper 
2 tbsp oil
2 slices of bread, toasted and torn
1/2 cup basil leaves
80g goat feta 


1. Add tomatoes, peaches, onion, oregano, vinegar, salt, pepper and oil into a large bowl and toss gently to combine. Allow to sit and marinate for 5 minutes.
2. Add the toasted bread and toss gentle to combine.
3. Transfer to a serving plate or bowl and garnish with basil leaves, feta and an extra grind of black pepper.
