A salad perfect for a Summer BBQ when peaches are at their best. And perfect to use up any stale bread! The stale and roasted bread soaks up the juices of the salad nicely.

Serves: 4 as a side
Ingredients
600g heirloom tomatoes, chopped into 2-4cm pieces
2 peaches, chopped into 2cm pieces
1/2 red onion, finely sliced
2 tbsp oregano leaves
1 tablespoon red wine vinegar
1/2 teaspoon sea salt
1/4 teaspoon freshly cracked pepper
2 tbsp oil
2 slices of bread, toasted and torn
1/2 cup basil leaves
80g goat feta
Method
- Add tomatoes, peaches, onion, oregano, vinegar, salt, pepper and oil into a large bowl and toss gently to combine. Allow to sit and marinate for 5 minutes.
- Add the toasted bread and toss gentle to combine.
- Transfer to a serving plate or bowl and garnish with basil leaves, feta and an extra grind of black pepper.
