SERVES: 2 

INGREDIENTS 

4 slices Turkish bread 
2 cups butter lettuce 
1/4 small fennel, finely sliced 
1/2 small red onion, finely sliced 
200g roasted or poached sliced chicken
1/2 avocado 

Dilly Mayonnaise 
2 gherkins
1/4 cup finely chopped dill 
2 teaspoons Dijon mustard 
1/3 cup mayonnaise 
1 tablespoon lemon juice 
1/2 teaspoon sea salt 
1/4 teaspoon freshly ground black pepper 

METHOD 

To make the Dilly Mayonnaise, add all ingredients to a bowl and mix to combine. 

Heat the olive oil in a large frying pan over medium heat. Add the slices of Turkish bread, cut-side down and cook for 2-3 minutes until golden brown. 

Spread two pieces of the Turkish bread with the avocado and the other two with the Dilly Mayonnaise. Top the sides with the Dilly Mayonnaise with the lettuce, fennel, onion and chicken. Add the avocado slice on top and slice sandwiches to serve.
