
A retro dessert to suit our retro kitchenware! These delicious Apple Fritters are as easy as mix and fry! This recipe makes quite a few, so great to share with a crowd.

SERVES 10
INGREDIENTS
2 cups plain flour
1⁄2 cup caster sugar
2 tsp baking powder
1⁄2 tsp ground cinnamon
1 tsp salt
3⁄4 cup milk
2 eggs
2 tsp vanilla extract
2 tbsp melted butter
3 Granny Smith apples, peeled and diced into 1cm pieces
4 cups vegetable oil, for frying
Cinnamon Sugar
1/2 cup caster sugar
1 tbsp cinnamon
METHOD
1. Combine flour, sugar, baking powder, cinnamon and salt to a large bowl.
2. In another bowl, whisk together the milk, eggs, vanilla and butter.
3. Pour the wet mixture into the dry and mix until almost combined. Add the apples and stir through until just combined. Add a dash of milk if needed to help bring the mixture together nicely.
4. Heat the oil in a heavy-base pot. It’s hot enough when you drop in a little piece of the batter and it starts sizzling.
5. Scoop up 1-heaped tbsp amounts of batter and place into the hot oil. Fry for 3 minutes on each side until golden brown and cooked throughout.
6. To make Cinnamon Sugar, mix sugar and cinnamon together into a large bowl.
7. Add the hot Apple Fritters to the boil with the Cinnamon Sugar and toss until well coated. Serve warm.
